Blueberry Muffins, Solar Baked - Crazy Cooking Challenge

Here's April's Crazy Cooking Challenge from Tina Hudgens at Mom's Crazy Cooking, and this time it's a perfect spring challenge -- Blueberry Muffins! As always, the point is to highlight the recipes of other non-professional cooking bloggers and help them get followers, too, so I leave the recipe at their site in hopes that you'll be so intrigued, that you'll pay them (and, all the other entrants!) a visit. Enjoy the blueberry season with my recipe found at FoodBlogga. It's her mother's recipe from the old Jordan Marsh Blueberry Muffins that were sold in Boston, Mass.

I did two variations, muffins, and -- muffin TOPS! I love my new pan and fell in love with the results. I've always preferred the tops to the whole muffin and, now, I am a happy cook. But, don't get fooled. Those muffin tops take as much batter as the muffins, themselves, so you're still eating the same amount of delicious blueberry goodness!

    I tried to make a raspberry/peach cobbler with jam because I don't have any kind of fruit at home. Well if one likes a giant sort of shortcake this would probably work :-) :-) :-)

  2. Oh wow! You just brought back some memories for me. I live in Worcester, MA an hour outside Boston and we used to have a Jordan Marsh here. I don't know if we had those muffins but I do remember blueberry muffins at the mall here that had Jordan Marsh when I was a young child and I wonder if they were the same ones. Anywho, these look great and so glad you shared. Love the muffin tops too. That is the best part!! :)

    1. Don't know if they spread over MA state, or not. I was just a little thing, back then. The muffin tops are incredible. I may never eat another full cup muffin, again!

  8. Holy smokes! That's a lot of muffin recipes LOL I *love* the idea of a pan that lets you make just muffin -tops-. I will have to get one for my daughter. She's all about cupcakes and baking these days. Just imagine, cupcake tops! Om nom nom!
